Just bought a Grinner on sale and set it up with my Cicada 3M build for the most part:

You can also shave more off of the arms to max out the engine at 295.

MPL for a stealth build is a controversial concept for me. I want it to work, but it's probably more logical to go with ERML's and attack from outside of 200-whatever meters where the ECM will still protect you (after being skilled). 4MPL is too hot to just run around fighting with stealth on, so MPL's might work skirmishing if stealth is more reserved for getting away.

Stealth and lasers don’t really go well together

Additional 1.5 heat / s is huge. If you really want to make this build viable, you MUST maximize cooling efficiency

Other than that, why stealth armor? If you brawl with MPLs, ECM will be enough to prevent shared targeting to your victim's comrades and ECM will be enough up to 270 meters

What would people do with the Grinner, who's designed for stealth but can also use lasers? Just limiting to ERML's and firing from far away?

    IMHO, yes.

It's true that stealth armor helps in a brawl, especially against streak or ATM boats (don't forget tag, narc and ppc can disable your ECM and stealth), but the additional heat generated doesn't combine well with lasers. Take for example my favorite stealth mech: javelin 4xSRM4

This build is so hot that after 3-5 alpha strikes it needs to roll out or disable stealth. With MPLs, I'm pretty sure you will overheat at the 3rd or 4th alpha strike (I can actually do the math... I'll edit again later). Also, SRM4 alpha is quite big (32-36 damage), even if spreaded, 4xMPL is a nimble 24 pinpoint alpha. You can make it work, but it's a bit underwhelming for a wolfhound considering you can fit 5xMPL, 4xMPL + 2xERSL or even 6xMPL builds.

This is in theory: if you can manage to roll in with stealth, alpha strike enough to pop a side torso, cripple or kill your target and roll out with stealth active (or with additional 1-2 strikes without stealth active), your build will work. If it doesn't, there is little to no point to add stealth compared to an ECM only build (no fixed occupied slots, more tonnage available).

    Proposed build: 14 DHS, 3.08 heat/s, alpha coefficiency 11, cooling efficiency 69%

Stealth armor generates and additional 1.5 heat/s, so it's safe to say your dissipatio will drop to 1.58 heat/s
I can't share the build, but simply drop to an XL 100 engine and you will see the effects (7 DHS total, so by activating stealth by pure coincidence you are halving your heat dissipation):
Alpha coefficiency 4.4, heat efficiency 34%. Alpha heat is 14.3 which means you need a full 9 seconds before you can fire again once you are hot...

So in the end its 24*4 = 96 damage you can deal before overheating... You can make it work, but you really need good aiming and steel nerves to always focus on the right component. I think I can give it a try, but I don't see it performing very well. It can work to selectively assassinate specific targets, like lonely ATM or LRM boats (keep stealth active while getting close to avoid enemy locks, deactivate stealth once inside their minimum range), but then again: is stealth really worth it when you know you will have to deactivate it to prevent overheating?

ALT: 4xMPL + 1xERSL. You lose 1DHS for an additional ERSL and a bit more alpha. Better suited for the "using stealth only when needed" role, but you can't be too greedy on keeping your stealth always active.
